Limited Edition ForaGIN

We at York Gin have released a new limited edition gin flavoured with herbs foraged in York, with £2 from each bottle going to a local charity.

ForaGIN includes among its botanicals four plants foraged from York meadows and riverbanks by local foraging expert Carl Wain.

Carl is also deputy chief executive of Age UK York, and £2 from each bottle is going directly to the charity.

The gin is the first in our 'Distiller's Cut' series of special limited edition spirits. At 47.5% ABV it is stronger than our normal York Gin range.

ForaGIN's four locally-foraged botanicals from the meadows and riverbanks of York are: lime tree flower, pineapple weed, hogweed seed and cow parsley seed.

Carl, who leads the popular Planet South Bank foraging walks along the south bank of the Ouse, around Danesmead Wood, Millennium Fields and Nun Ings, hand-picked each of these plants over the summer.

Then our distillers set to work at York Distillery to create this first Distiller's Cut gin.

To develop this gin, we distilled small quantities of locally-foraged botanicals separately in small copper stills at York Distillery. Distilling each foraged plant on its own allowed us to identify each plant's flavour characteristics. We then blended these distilled spirits into our London Dry gin by hand, measure by measure, until this new Distiller's Cut came perfectly into balance.

Carl said: "Every plant in this gin grew wild within a walk of the city. Hogweed seed that smells of cardamom and orange, lime blossom loud with bees, cow parsley frothing the lanes in May. York's riverbanks and hedgerows are a larder most people walk straight past. It's a real pleasure to see them distilled into a lovely spirit."

We are making only 200 bottles of the gin, and when they are sold, there simply won't be any more available.
